We analyze each parameter precisely to ensure that the fruit ripen to the ideal degree both technically and phenolically!
However, our work is not just about numbers – the most basic criteria and tool that guides us is ..taste. This is why we taste the grapes, feeling the promise of the future wine that will have the perfect balance, ripeness and quality!
Here we are sampling Agiorgitiko variety – one of the most important grapes for us, since it’s behind the premium label “Old Roots” of La Tour Melas!
