Behind every blend, there is a chain of decisions.

Usually, when we talk about blends, we focus on the final result, the “magic” of composition, balance, and ultimately the wine in the glass. But before getting there, there is another side of the work, the one that rarely gets seen.

In this behind-the-scenes moment from Symeon Winery in Cyprus, we see a different side of winemaking for the label “TOPOS”. One that is not only about the final wine itself, but about all the decisions leading up to it.

A blend may begin on paper, but then a whole “tetris” of decisions starts inside the winery.

Where will each wine go?

Which barrel needs to be emptied?

Which tank is available?

How much space is left?

How does one movement affect the next?

Tanks, barrels, volumes, rackings, available space. Every decision affects the overall balance and the continuation of the process.

At this stage, technical knowledge meets experience and strategic thinking, as every choice affects not only the process itself, but also the character of the final wine.

Because winemaking does not happen only in the vineyard or in the glass. It happens every day, through people, coordination, and decisions.

And somehow, through composition and direction, every blend develops its own story.
